How to make Pancake Muffins (in only 12 minutes!)
This is a super easy & quick breakfast to spice up your week.
- Make your pancake batter as you normally would.
- Pour the batter into greased muffin tins 1/2 to 3/4 full.
- Bake at 325 degrees for 12 minutes.
- Top with fruit, chocolate chips, or whatever pancake topper you typically love.
- Drizzle with syrup

I have made a bunch of versions. Like adding Nutella to the batter and adding chocolate chips. Adding PB2 powder to the batter and again, more chocolate chips! I hope you love them as much as I do 🙂

I use pioneer woman’s recipe for our pancake batter and I’m wondering if that would work too for this recipe because these seem like they would be easy to freeze and heat up quickly during weekdays.

I have seen a pancake muffin recipe before, I was not brave enough to try it for fear that the batter would not rise enough. But apparently this works because here is another one, curiosity has me off to bake me some pancake muffins today!
